Tartelettes au Chocolat Viennois Noir Dessert

    Ingrédients

  • - 100 g de chocolat Noir Dessert Poulain
  • - 60 g de sucre glace
  • - 1 pincée de sel
  • - 300 g de farine
  • - 200 g de beurre
  • - 180 g de chocolat Noir Dessert Poulain
  • - 20 g de sucre en poudre
  • - 3 jaunes d’œufs
  • - 125 g de lait entier
  • - 200 ml de crème liquide entière froide
  • - Cacao en poudre
  • - 20 g de sucre glace
Où le trouver
  • Étape 1

    Préchauffer le four à 180°C.

  • Étape 2

    Préparer la pâte sablée au chocolat. Faire fondre le chocolat au bain marie. Dans saladier sabler la farine, le sucre glace, le sel, le beurre coupé en petits morceaux. Ajouter le chocolat fondu, amalgamer et former une boule. Étaler la pâte et foncer un moule à tarte. Réserver au frais pendant 1 heure.

  • Étape 3

    Placer des billes de cuisson (ou des haricots secs) sur la pâte et enfourner pour 30 minutes environ. Laisser refroidir.

  • Étape 4

    Préparer la crème au chocolat. Dans une casserole faire chauffer le lait. Dans un saladier, battre les jaunes d’œuf avec le sucre. Au premier bouillon du lait, verser sur le mélanger aux œufs en fouettant. Reverser le mélange dans la casserole et faire chauffer jusqu’à ébullition sans cesser de remuer avec une cuillère en bois. Quand la crème a épaissi et nappe la cuillère, retirer du feu et verser sur le chocolat cassé en morceaux. Mélanger vivement jusqu’à ce que le mélange soit bien lisse. Laisser refroidir.

  • Étape 5

    Préparer la chantilly. Fouetter la crème liquide avec le sucre glace jusqu’à l’obtention d’une chantilly bien ferme. Placer dans une poche à douille.

  • Étape 6

    Garnir les fonds de tartelette avec la crème au chocolat et pocher la chantilly sur le dessus. Parsemer de cacao en poudre.
