Babka à la Pralinoise

    Ingrédients

  • - 300g de farine
  • - 4g de levure sèche de boulanger
  • - 1cc de sel
  • - 15g de sucre en poudre
  • - 125ml de lait entier
  • - 2 œufs
  • - 35g de beurre doux ramolli
  • - 50g de pralin
  • - 80g de Pralinoise Poulain
  • - 40g de beurre doux
  • - 80g de sucre en poudre
  • - 50ml d'eau

  • Étape 1

    Commencez par préparer la pâte à brioche (à faire la veille). Réhydratez la levure sèche dans 2cs de lait tiède, laissez reposer 10 minutes. Dans un récipient ou robot, mélangez la farine, le sel et le sucre. Ajoutez le mélange lait/levure puis le reste du lait et les œufs. Mélangez le tout (crochet du robot ou à la main) environ 15 minutes pour obtenir une pâte élastique. Ajoutez ensuite le beurre ramolli en dés, et mélangez à nouveau jusqu’à complète incorporation pendant environ 15 minutes. La pâte doit être élastique et peu collante. Transférez le pâton dans un large récipient légèrement huilé et couvrir de film alimentaire. Réfrigérez une nuit.

  • Étape 2

    Préparez la garniture : dans une casserole, faites chauffer à feu doux la Pralinoise en morceaux et le beurre en dés puis lissez le tout. Versez dans un récipient pour accélérer le refroidissement, afin d’obtenir une consistance comparable à la pâte à tartiner.

  • Étape 3

    Graissez et chemisez un moule à cake de 22 x 10 cm. Sur un plan de travail fariné, abaissez la pâte sur un large rectangle d’environ 30 x 40cm. Avec une spatule, étalez la garniture Pralinoise sur la brioche en laissant un petit espace sur les bords. Saupoudrez de pralin. Roulez la brioche en partant du côté le plus large. Avec un bon couteau, coupez au centre du rouleau obtenu de façon à obtenir 2 longs morceaux de pâte. Tressez ensemble les deux morceaux de pâte (la garniture doit être visible sur le dessus pour un joli rendu final). Déposez la tresse réalisée dans le moule. Couvrez de film alimentaire et laissez reposer (deuxième pousse) dans un endroit tiède pendant 1h30. La pâte doit doubler de volume.

  • Étape 4

    Enfournez dans un four préchauffé à 180° chaleur traditionnelle pendant environ 35 minutes. Couvrez à mi-cuisson pour conserver une belle couleur sur le dessus de la brioche.

  • Étape 5

    Préparez le sirop pour imbiber la brioche : dans une casserole, chauffez le sucre et l’eau jusqu’à ébullition. A l’aide d’un pinceau, nappez de sirop la brioche à la sortie du four. Saupoudrez de pralin et dégustez !

Mélangez le tout (crochet du robot ou à la main) environ 15 minutes pour obtenir une pâte élastique. Ajoutez ensuite le beurre ramolli en dés, et mélangez à nouveau jusqu’à complète incorporation pendant environ 15 minutes. La pâte doit être élastique et peu collante. Transférez le pâton dans un large récipient légèrement huilé et couvrir de film alimentaire. Réfrigérez une nuit."

Tressez ensemble les deux morceaux de pâte (la garniture doit être visible sur le dessus pour un joli rendu final). Déposez la tresse réalisée dans le moule. Couvrez de film alimentaire et laissez reposer (deuxième pousse) dans un endroit tiède pendant 1h30. La pâte doit doubler de volume."
