Flan pâtissier à la Pralinoise

    Ingrédients

  • - 180g de Pralinoise Poulain
  • - 185g de farine
  • - ½ cuillère à café rase de levure
  • - 1 pincée de sel
  • - 25g de poudre de noisettes
  • - 50g de sucre glace
  • - 110g de beurre
  • - 1 œuf
  • - 700g de lait entier
  • - 300g de crème
  • - 4 œufs
  • - 150g de sucre
  • - 70g de Maïzena (fécule de maïs)
Où le trouver
  • Étape 1

    Commencez par préparer la pâte. Dans le robot, mettez la farine, la levure, le sel, la poudre de noisettes, le sucre glace et le beurre. Mélangez quelques secondes de façon à obtenir un "sable". Ajoutez l'œuf et mélangez brièvement, jusqu'à voir une boule se former. Eventuellement, ajoutez un petit filet d'eau.

  • Étape 2

    Mettez la pâte sur une feuille farinée et étalez-là pour garnir un cercle de 20 cm de diamètre et de 5 cm de hauteur. Si la pâte est trop molle, il est possible de la passer un moment au frais pour pouvoir l'étaler plus facilement. Réservez au frais pendant au moins 1 heure.

  • Étape 3

    Pendant ce temps, préparez la garniture. Faites chauffer le lait et la crème dans une casserole. Dans un saladier, fouettez les œufs et le sucre. Ajoutez la Maïzena et mélangez bien. Versez le mélange lait + crème chaud dessus en plusieurs fois, tout en mélangeant. Remettez le tout dans la casserole et laissez épaissir à feu doux tout en remuant. Arrêtez la cuisson dès que le mélange a épaissi.

  • Étape 4

    Ajoutez la Pralinoise et mélangez bien. Recouvrez la crème d'un film plastique et laissez tiédir.

  • Étape 5

    Préchauffez le four à 180°C. Versez la crème froide sur la pâte. Faites cuire pendant environ 50 minutes : le dessus doit être joliment doré. Laissez refroidir à température ambiante.

L'astuce Poulain !

Le flan pâtissier peut-être mis au frais pour le lendemain. L'idéal est de le sortir au moins 1 heure avant la dégustation
