Chinois au Chocolat Noir Dessert

    Ingrédients

  • - 50 cl de lait
  • - 40 g de sucre
  • - 4 jaunes d’œuf
  • - 40 g de maïzena
  • - 500 g de farine
  • - 1 cuil. à café de levure de boulangerie en grains
  • - 2 œufs
  • - 100 g de beurre mou
  • - 30 g de sucre
  • - 1 cuil. à café de sel
  • - 20 cl de lait tiède
  • - 150 g de chocolat Noir Dessert Poulain
Où le trouver
  • Étape 1

    Préparer la crème pâtissière. Dans une casserole faire chauffer le lait. Dans un saladier, battre les jaunes d’oeuf (garder une cuillère d’oeuf pour la dorure) avec le sucre et incorporer la maïzena. Au premier bouillon du lait, verser sur le mélanger aux oeufs en fouettant. Reverser le mélange dans la casserole et faire chauffer sans cesser de remuer avec une cuillère en bois. Quand la crème a épaissi et nappe la cuillère, retirer du feu. Filmer au contact, laisser refroidir et réserver au frais.

  • Étape 2

    Préparer la pâte à brioche. Dans un robot pâtissier muni d’un crochet, verser la levure, la farine, le sucre, le sel. Ajouter les oeufs et le lait. Pétrir pendant 5 minutes à vitesse moyenne. Ajouter progressivement le beurre et continuer à pétrir pendant 15 minutes environ (la pâte doit se décoller des bords). Former une boule de pâte et laisser lever pendant 1 heure environ dans un endroit chaud.

  • Étape 3

    Quand la pâte a bien levé, dégazer la pâte en l’écrasant sur un plan de travail fariné. Étaler la pâte en un grand rectangle. Étaler la crème pâtissière et parsemer de chocolat Noir Dessert cassé en pépites. Rouler le tout pour former un grand boudin et détailler en tronçons de 5 cm environ. Disposer les tronçons dans un plat ou un moule à gâteau. Laisser de nouveau lever pendant 1 heure environ dans une endroit chaud.

  • Étape 4

    Préchauffer le four à 180°C.

  • Étape 5

    Dorer avec le jaune d’œuf réservé et mélangé avec un peu de lait et enfourner pour 30 minutes environ.
